These are a TON of work but SOOO much fun!  Adrenaline pumping, limps flying, a zillion plates/dishes.... awesome stuff!  I suppose it would be a lot easier if I had assistants, it’s quite a crazy accomplishment to fly solo on these.  Best part is watching people’s faces light up when they enjoy each course!   (my version of chef’s meal:  every course cooked/prepared  fresh and served immediately... large portions, not the usual “tasting” portions)
